Renown for their quality and taste, Mimosa Rock Oysters are wild caught and nurtured in the crystal clear waters of Nelson Lagoon and Wapengo Lake. These estuaries are uniquely located within the spectacular Mimosa Rocks National Park.
The water shed from the surrounding native forests carries with it a rich suite of organic matter rich in minerals which are infused in the alluvial and sandy substrates. Oceanic tidal influences move across the shallow sandy substrates to create a boiling pot of unique organic flavours which are encapsulated within the oyster.
The flavour reflects a complex yet smooth creamy textured taste. A mild salty flavour with light mineral tones resonate on the pallet creating a lasting experience.
